I’m not a professional chef and can only afford one knife right now. I already know it will be a Santoku. Where i work there is only one item i will ever need to cut that has a bone, and that is Frog legs. My question is if a santoku will be able to handle a small bone like this in the long run, or if i should just reach over and grab a in-house cleaver for that one item. I highly doubt one small bone will chip a blade, but will it weaken it with continued use?

Took me a few minutes to catch a spark using the “shower ” method (my least favorite). It’s important to learn this method though, because it is easier to perform with an injured arm or hand.

What You’ll Need ——————————————————————— Sharpened boning knife* Cutting board * Any type of roundfish (trout, bass, cod, pike, snapper or salmon)c 1. With your washed and dried fish, take some paper towel and wipe it from head to tail to avoid spines. 2. With your boning knife, cut a slit on the underbelly from the anal fin to the ventral fins. You may have to cut through some cartilage as you move closer to the head. 3. Use a clean hand to remove the entrails from the fish’s belly. You may have to tug fairly hard to pull all the organs out. 4. To remove the gills, cut the cartilage that connects them in the center as well as the pieces on each side connecting them to the body of the fish. 5.
